Oh My Gingerbread has been baking handmade gingerbread products under various names since 1998 with a traditional authentic German recipe handed down over three generations to our owner and Master Baker Sven Noack.
Sven began his apprenticeship at the age of 17 in his grandfather’s bakery, learning under his grandfather's watchful eye. At the age of 23, Sven became a certified Master Baker and was named the youngest person in Germany to qualify for such a title. In 2024 Sven will celebrate his 37th year as a baker of pastries and authentic gingerbread.
Despite his roots being originally in Germany, Sven has travelled to Canada and the USA to expand his skills before running a bakery in busy Tokyo Japan for seven years.
In 2009 Sven moved to Australia where he has built a life and is raising his family, all the while honouring his grandfather and forebears by continuing their legacy of baking traditional handmade bread, pastries and authentic gingerbread products.
Because of the enormous success of Sven’s boutique Christmas gingerbread products, in 2023 he made the decision to greatly expand gingerbread production and as a result of the immediate increase in demand, will be opening a second, purpose built, HACCP approved bakery in 2025 to increase the number of delicious handmade gingerbread men and other products available to Australians and people in other countries across the world – with every one still made and decorated by hand.
Sven shudders when he sees the number of “cookies” passed off as gingerbread in shops in this country, so when you take your first bite of an “Oh My Gingerbread” product you can be assured that you are enjoying authentic gingerbread free of preservatives and highlighted by the taste of all Australian ingredients and pure local honey.
